Breakfast Sugar: The Importance of Double Refined Sugar in Beverages, Premixes, Cakes, and Pastries
Sugar is a universal ingredient in the food industry, used to sweeten beverages, baked goods, and countless other food products. But not all sugar is the same, there are different types of sugar that can have varying effects on the taste, texture, and appearance of finished products.
One type of sugar that has gained popularity in recent years is double-refined sugar, also known as breakfast sugar. Breakfast sugar is a highly processed form of white granulated sugar that has undergone two rounds of refining to remove impurities and create a more uniform texture.
Properties of Sugar Globules
Sugar globules are available in a range of particle sizes, from 12 to 120 mesh (125 μ to 1680 μ). The size of the particles determines the rate at which they dissolve. These smaller particles tend to dissolve faster than larger particles.
It is important for the quality of the sugar globules to be either translucent or opaque in nature, indicating that they are free from impurities.
Features of Breakfast Sugar:
- Purest Form: It is one of the purest sugar and has almost no impurities.
- White: Since it is free from impurities, it is absolutely white in color.
- Twice-Refined: It is refined not once but twice during processing.
- Hygienic: It is made following the highest hygienic standards.
- Improved Solubility and Dissolvability:
One of the primary benefits of double–refined sugar is its improved solubility and dissolvability. Because double-refined sugar has a finer, more uniform texture than regular granulated sugar, it dissolves more easily in liquids and mixes more evenly into other ingredients. This makes it an ideal choice for use in premixes, beverages, and baked goods, as well as in other recipes where sugar needs to dissolve quickly and completely, such as in juices, tea, coffee, etc.
- Enhances Texture:
It has the ability to improve the texture and mouthfeel of finished products. Since it dissolves more easily and mixes more evenly with other ingredients, It creates a smoother, creamier texture in beverages, cakes, and pastries. It can also help to prevent crystallization, which can lead to a gritty or grainy texture in some recipes.
- Enhance Color and Appearance:
Breakfast sugar has a whiter color and is the purest form of sugar. It is used for creating attractive finished products, particularly in recipes where the sugar is visible or plays a prominent role in the appearance of the dish. For example, using double-refined sugar in pastries can help to create a brighter, more pristine white color.
Uses of Breakfast Sugar:
Due to its improved solubility and dissolvability, texture, purity, white color and better appearance breakfast sugar is an idle ingredient in the following:
- Beverages
- Baked Good: Cakes, bread, batters, doughs, etc.
- Confectionery: Candies, chocolates, syrups, fillings, etc.
- Dairy Products such as Ice cream, yogurt, etc.
- Sauces & Dressings: Added in barbeque sauce, ketchup, salad dressing, etc. to attain viscosity.
